I made this recipe for Russian Sweet Cabbage Soup a few weeks ago the first time, then made it again not long after. It was an instant hit, and its perfect for a cold night, and is great even as leftovers reheated the next day. Its also really easy to make. I orignally started with a recipe sent to me by a friend, but made several changes as I was preparing it to make it more suited to our tastes. Here’s how to make it! Russian Sweet Cabbage Soup

This will make 5 very generous bowls of soup.
Ingredients
- 1 pound ground lean beef
- 1 (14.5 ounce) can stewed tomatoes
- 1 (8 ounce) can tomato sauce
- 4 cubes beef bouillon
- 2 medium carrots, shredded
- 1 onion, chopped
- ¼ cup white vinegar
- ¼ cup white sugar
- ½ teaspoon ground black pepper
- 3 cloves garlic, finely chopped
- 1 head cabbage, cored and cut into chunks
- Water
Instructions
- Cook the crumbled ground beef in the bottom of your pot until browned.
- Add the stewed tomatoes, tomato sauce, beef bouillon, carrots, onion, vinegar, sugar, and pepper. ad enough water co cover all, and bring to a boil.
- Once the soup comes to a boil, cover and simmer for 30 minutes over low heat.
- Add the garlic and cabbage to the pot. Simmer for 25 minutes, or until cabbage is tender. Add more water if needed.
- Serve and enjoy!
